Spaghetti Carbonara

  • 1 lb spaghetti
  • 4 oz guanciale or pancetta, diced
  • 2 large eggs
  • 1/2 cup grated Pecorino Romano cheese
  • Freshly ground black pepper

Instructions

  1. Cook spaghetti according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, crisp the guanciale in a large skillet over medium heat.
  3. In a bowl, whisk eggs, cheese, and a generous amount of black pepper.
  4. Add drained pasta to the skillet with guanciale. Immediately pour the egg mixture over the pasta, tossing quickly to coat. The heat from the pasta will cook the eggs.
  5. Add reserved pasta water a little at a time to create a creamy sauce. Serve immediately.

Ingredients

  • 1 pre-made pizza dough or homemade dough
  • 1/2 cup pizza sauce

Instructions

  • 2-3 cloves garlic, finely minced

Instructions

  1. Heat olive oil in a skillet over medium heat.

Instructions (Cake)

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. Whisk dry ingredients in a large bowl. In a separate bowl, whisk wet ingredients.
  3. Combine wet and dry ingredients and mix until just combined.
  4. Pour batter into pan and bake for 35-40 minutes.

Instructions (Cake)

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. Whisk dry ingredients together. In a separate bowl, whisk oil, sugar, and eggs.
  3. Combine wet and dry ingredients, then fold in carrots and nuts.

Instructions (Topping)

  1. Heat heavy cream until it simmers. Pour over chocolate chips.

Instructions

  1. Heat oil and butter in a large pot. Cook onion until soft. Add garlic and mushrooms; cook until tender.
  2. Add rice and toast for 1-2 minutes. Pour in wine and stir until absorbed.
  3. Add hot broth, one ladleful at a time, stirring constantly until absorbed before adding the next. Continue until rice is al dente.
  4. Remove from heat. Stir in Parmesan, parsley, salt, and pepper. Serve immediately.

  6. Add cooked pasta to the sauce and toss to coat. Add pasta water if needed to adjust consistency. Garnish with remaining parsley and serve.
