Spaghetti Carbonara
A classic Italian pasta dish made with eggs, hard cheese, cured pork, and black pepper.
Ingredients
- 1 lb spaghetti
- 4 oz guanciale or pancetta, diced
- 2 large eggs
- 1/2 cup grated Pecorino Romano cheese
- Freshly ground black pepper
- Salt to taste
Instructions
- Cook spaghetti according to package directions. Reserve 1 cup of pasta water before draining.
- While pasta cooks, crisp the guanciale in a large skillet over medium heat.
- In a bowl, whisk eggs, cheese, and a generous amount of black pepper.
- Add drained pasta to the skillet with guanciale. Immediately pour the egg mixture over the pasta, tossing quickly to coat. The heat from the pasta will cook the eggs.
- Add reserved pasta water a little at a time to create a creamy sauce. Serve immediately.

Ingredients
- 1 pre-made pizza dough or homemade dough
- 1/2 cup pizza sauce
- 2 cups shredded mozzarella cheese
- Your favorite toppings (pepperoni, mushrooms, onions, etc.)

Instructions
- Preheat oven to 450°F (230°C).
- Roll out dough on a floured surface. Transfer to a baking sheet.
- Spread pizza sauce evenly over the dough, leaving a border for the crust.
- Sprinkle with mozzarella cheese and arrange your toppings.
- Drizzle with a little olive oil. Bake for 10-15 minutes, or until crust is golden and cheese is bubbly.

Ingredients
- 1 cup dry breadcrumbs
- 2-3 cloves garlic, finely minced
- 2 tablespoons olive oil
- Pinch of red pepper flakes (optional)

Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and red pepper flakes and cook for about 30 seconds until fragrant.

- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 cup powdered chocolate or cocoa powder
- 1 cup hot water
- 1/2 cup vegetable oil

- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt

- 4 tbsp sugar

Instructions (Cake)
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- Whisk dry ingredients in a large bowl. In a separate bowl, whisk wet ingredients.
- Combine wet and dry ingredients and mix until just combined.
- Pour batter into pan and bake for 35-40 minutes.

Instructions
- Heat oil and butter in a large pot. Cook onion until soft. Add garlic and mushrooms; cook until tender.
- Add rice and toast for 1-2 minutes. Pour in wine and stir until absorbed.
- Add hot broth, one ladleful at a time, stirring constantly until absorbed before adding the next. Continue until rice is al dente.
- Remove from heat. Stir in Parmesan, parsley, salt, and pepper. Serve immediately.
Creamy Garlic Mushroom Pasta
A quick and satisfying meal that combines tender mushrooms with a silky, rich garlic cream sauce.
Ingredients
- 1 lb pasta
- 2 tbsp olive oil
- 1 tbsp butter
- 1 lb cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh parsley, chopped
- Salt and black pepper
Instructions
- Cook pasta according to package directions. Reserve 1 cup of pasta water.
- In a large skillet, heat oil and butter. Cook mushrooms for 5-7 minutes.
- Reduce heat, add garlic, and cook for 1 minute.
- Pour in heavy cream and simmer until slightly thickened.
- Stir in Parmesan and half of the parsley. Season.
- Add cooked pasta to the sauce and toss to coat. Add pasta water if needed to adjust consistency. Garnish with remaining parsley and serve.
